I change the water every hour or so. I also don't bother with cooking on Christmas, IMHO it's not a holiday if I have to spend the whole day cooking. We order a pan of lasagna from our favorite Italian place. Pick it up Christmas Eve and just pop it in the oven Xmas day and 1-1/2 hours later dinner is ready. :) Home made food without being home made by me. Best thing I probably ever bought for my kitchen is a Le Crusset pot. Love it to death, it's an investment - but it's been worth every penny.
